I am attempting to collect 1 month of historical data from a sensor. How can I do that? please provide the easiest way … python seems to be difficult to use

If you don’t have a lot of experience coding and querying APIs, you might want to consider using the Data Download Tool. The download tool will query the API for you, so that you do not have to do any of your own code.
